Ingredients
  

Salad Ingredients

  • 10 oz spring lettuce mix or baby spinach
  • 3 medium gala apples cored and thinly chopped
  • 1 cup pecans toasted and chopped
  • 1 cup feta cheese crumbled
  • ½ cup dried cranberries
  • 12 oz bacon cooked and chopped
  • ½ small red onion sliced into thin strips

Maple-Cider Vinaigrette

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoon pure maple syrup
  • 1 tablespoon dijon mustard
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper

Instructions
 

Preparation

  • Make the dressing: Mix all dressing ingredients in a bowl until well blended. Or add to a mason jar, cover with lid, and shake to blend well.
  • In a large salad bowl, layer together lettuce blend, apples, pecans, feta, cranberries, bacon, and red onion.
  • Drizzle dressing over salad and toss to evenly coat.
  • Serve immediately after adding dressing.
