Ingredients
  

  • 4 fillets salmon about 6 oz each
  • ½ cup peach preserves or jam
  • 2 tablespoons bourbon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger optional
  • salt to taste
  • black pepper to taste
  • fresh thyme for garnish
  • parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper or lightly grease it.
  • In a small saucepan over medium heat, combine peach preserves, bourbon, Dijon mustard, soy sauce, olive oil, garlic, and ginger (if using). Stir and simmer for 4-5 minutes until the glaze thickens slightly. Remove from heat.
  • Pat the salmon fillets dry and place them skin-side down in the prepared baking dish. Season with salt and pepper.
  • Spoon half of the bourbon peach glaze over the salmon, coating each fillet evenly.
  • Roast the salmon in the oven for 12-15 minutes or until the fish flakes easily with a fork. In the last 2-3 minutes of roasting, brush on the remaining glaze.
  • Garnish with fresh thyme or parsley before serving.

Notes

For a spicy kick, add a pinch of red pepper flakes or a dash of hot sauce to the glaze. Substitute the salmon with trout or cod for a different texture. If peach preserves are unavailable, apricot or mango jam can be used as a substitute.
