Ingredients
  

Dressing

  • 3 tablespoons peanut butter crunchy or creamy
  • ¼ teaspoon ground ginger
  • ½ cup non-dairy milk
  • 2 tablespoons agave or maple syrup
  • Pinch red pepper flakes optional
  • 1 tablespoon low sodium soy sauce

Salad

  • ¼ cup pumpkin seeds
  • head green cabbage thinly sliced
  • 1 cucumber English preferred chopped
  • 1 cup cooked shelled edamame
  • 10 green onions whites and greens chopped
  • sesame seeds optional for garnish

Instructions
 

Preparation

  • Prepare the dressing by adding all the ingredients into a small blender, mix until well incorporated and turns into a thick dressing.
  • Optional, toast the pumpkin seeds by spraying them with a bit of spray oil, adding salt and pepper, and cooking on medium heat for 5 minutes while shaking the pan occasionally.
  • Assemble the salad by adding all ingredients except for the sesame seeds. Pour over the dressing and toss to coat everything evenly.
  • Sprinkle sesame seeds over top for garnish and enjoy.
