Dressing
- 3 tablespoons peanut butter crunchy or creamy
- ¼ teaspoon ground ginger
- ½ cup non-dairy milk
- 2 tablespoons agave or maple syrup
- Pinch red pepper flakes optional
- 1 tablespoon low sodium soy sauce
Salad
- ¼ cup pumpkin seeds
- ⅓ head green cabbage thinly sliced
- 1 cucumber English preferred chopped
- 1 cup cooked shelled edamame
- 10 green onions whites and greens chopped
- sesame seeds optional for garnish
Preparation
Prepare the dressing by adding all the ingredients into a small blender, mix until well incorporated and turns into a thick dressing.
Optional, toast the pumpkin seeds by spraying them with a bit of spray oil, adding salt and pepper, and cooking on medium heat for 5 minutes while shaking the pan occasionally.
Assemble the salad by adding all ingredients except for the sesame seeds. Pour over the dressing and toss to coat everything evenly.
Sprinkle sesame seeds over top for garnish and enjoy.
