Ingredients
  

Pasta and Seafood

  • 1 box Penne pasta cook as directed
  • 1 pound peeled shrimp tails removed
  • 3 cups chopped fresh spinach

Sauce and Seasoning

  • 1 Tbsp. minced garlic
  • 2 Tbsp. butter
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 3 tsp. olive oil

Instructions
 

Cooking Instructions

  • Prepare the penne pasta as per package directions.
  • Set to the side.
  • In a large saute pan, drizzle olive oil and add the spinach with the minced garlic.
  • Cook until tender.
  • Add the cooked shrimp to the spinach and toss to combine.
  • Add the pasta to the shrimp mixture and toss to combine.
  • In a small saucepan, add the heavy cream and bring to a boil.
  • Add the mozzarella to the cream and stir until all of the cheese is melted.
  • Pour the cheese sauce over the pasta mixture and toss to combine.
  • Garnish and enjoy!

Notes

This dish can be garnished with fresh herbs for added flavor.
