Ingredients
  

  • 18-24 large strawberries Use large strawberries to ensure they can hold enough filling.
  • 1 cup heavy whipping cream
  • 8 oz cream cheese softened
  • cup white granulated sugar
  • 1 tablespoon vanilla extract
  • 1 tablespoon fresh lemon juice (optional)
  • ½ cup graham cracker crumbs

Instructions
 

Prepare the strawberries

  • Cut off the stems and slice strawberries in half.
  • Cut a small sliver off the back of each strawberry half so they sit upright.

Hollow out the strawberries

  • Use a small melon baller to gently scoop out a small indent from the center of each strawberry half, enough to hold the filling.

Whip the cream

  • In a medium bowl, beat the heavy whipping cream until stiff peaks form (about 5 minutes).

Make the cheesecake filling

  • In a separate bowl, combine softened cream cheese, sugar, vanilla extract, and lemon juice (if using).
  • Mix with an electric mixer until smooth and creamy.

Fold in the whipped cream

  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Fill the strawberries

  • Fill a piping bag with the cheesecake filling (a star tip works great for presentation).
  • Pipe the cheesecake mixture onto each hollowed-out strawberry.

Top with graham cracker crumbs

  • Sprinkle a small amount of graham cracker crumbs on top of the filled strawberries for a cheesecake crust effect.

  • These strawberries are perfect as a dessert or appetizer for any occasion!

Notes

You can prepare the cheesecake filling ahead of time; however, fill the strawberries just before serving to prevent them from becoming soggy. For a smoother filling, ensure the cream cheese is softened completely before mixing.
