Ingredients
  

Crust

  • 1.25 cups graham cracker crumbs (about 8 whole crackers, finely crushed)
  • 0.25 cups granulated sugar
  • 0.5 teaspoon cinnamon optional; for enhanced flavor
  • 5 tablespoons unsalted butter melted

Filling

  • 0.33 cups hot water
  • 2 tablespoons King Arthur Triple Cocoa Blend or Dutch-process cocoa
  • 1 tablespoon King Arthur Pure Vanilla Extract
  • 1.33 cups bittersweet chocolate chips chunks, or disks
  • 1.5 cups heavy cream
  • 1 tablespoon granulated sugar
  • 0.125 teaspoon table salt

Topping

  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar

Instructions
 

Crust Preparation

  • Preheat the oven to 375°F. Lightly grease a 9" pie pan.
  • Combine all the crust ingredients and press the mixture into the bottom and up the sides of the pan.
  • Freeze the crust for 15 minutes, then bake for 8 to 10 minutes, until it's lightly browned around the edges.
  • Remove from the oven and cool completely.

Filling Preparation

  • Combine the hot water, cocoa, and vanilla in a small measuring cup and set aside.
  • Heat the chocolate in a saucepan set over low heat, or in the microwave in 20-second bursts. Stir until completely melted, then let cool.
  • In a large bowl, whip the cream, sugar, and salt to soft peaks.
  • Stir the cocoa mixture into the melted chocolate.
  • Fold the chocolate mixture into the whipped cream until no white streaks remain.
  • Spread the filling evenly into the cooled crust.
  • Refrigerate the pie for at least 1 hour before serving, or until the filling is firm.

Topping Preparation

  • Whip the cream and sugar together until the mixture is as firm (or soft) as you like.
  • Slice the chocolate icebox pie, and top each serving with a dollop of whipped cream and a chocolate curl, if desired.

Notes

This pie is ideal for summer events due to its easy no-bake preparation and refreshing taste.
