Ingredients
  

  • 280 g Chicken breast cut into strips
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 140 g Orzo
  • 2 cloves Garlic crushed
  • 500 ml Chicken stock
  • 100 g Spinach
  • 10 Cherry tomatoes
  • 2 tablespoons Sun-dried tomato pesto
  • 20 g Parmesan grated
  • 50 ml Crème fraîche
  • 1 pinch Sea salt
  • 1 pinch Ground black pepper

Instructions
 

  • Coat Chicken breast chunks in Paprika and Italian seasoning.
  • Heat Olive oil in a large pan and add the coated chicken. Cook for 2-3 minutes on each side. Once cooked, set aside.
  • In the same pan, add Orzo, Garlic, and Chicken stock. Simmer for 6-7 minutes, stirring occasionally.
  • Add Spinach, Cherry tomatoes, Parmesan, and Sun-dried tomato pesto. Mix well.
  • Add Crème fraîche and season with Sea salt and Ground black pepper. Mix well and cook until the spinach has wilted.
  • Add the cooked chicken and simmer until everything is cooked through.

Notes

This sauce will thicken as it cools, so you can add some extra stock to thin it out if you prefer. You can use another protein like salmon, prawns or even steak. Only use freshly grated Parmesan.
