Honey Garlic Meatballs

SAUCE
- 2 Tbl. olive oil
- 4 Tbl. minced fresh garlic
- ½ cup honey
- ¼ cup sweet chili sauce
- ½ cup coconut milk
- ½ cup light soy sauce
- 1 Tbl. black sesame seeds
- 1 tsp. black pepper
MEATBALLS
- 1 lb. ground chicken
- 1 lb. ground pork
- 3 Tbl. nutritional yeast
- 2 tsp. garlic granules
- 2 tsp. onion powder
- 1 tsp. salt
- 1 tsp. smoked paprika
- ½ cup fresh parsley, finely chopped
- ½ cup saltines or whole oats, pulsed in food processor into a fine mixture
- ½ cup fresh Italian parsley, finely chopped
Instructions
In a medium saucepan over medium heat, put all the ingredients for the sauce. Let it come to a simmering boil for about 10 minutes. Turn off heat.
In a large mixing bowl, put the ingredients for the meatballs. Blend really well with your hands working everything together. Roll meatballs (about golf ball size) and place on parchment paper on a cookie sheet.
Bake in a preheated 400 oven for about 18 to 20 minutes.
Remove meatballs to a skillet (about 10" diameter). Cover the meatballs with the honey garlic sauce. Turn heat to simmer low. Cover and let the meatballs bask in the sauce for about 20 minutes before serving.
