Ingredients
  

Rice and Vegetables

  • 2 cups cooked rice Short or long grain
  • 1 clove garlic crushed
  • 2 large eggs
  • cup carrot finely chopped
  • cup onion finely chopped
  • cup shallots green part only, finely chopped
  • 60 g sliced ham cut into small pieces
  • 1 packet fried rice seasoning
  • 3 tablespoon oil
  • 1 teaspoon sesame oil

Instructions
 

Cooking Steps

  • If cooked rice is cold, microwave for 1 minute to warm up.
  • Heat 2 tablespoons of oil in a wok or a large frypan over medium heat and add the garlic.
  • When garlic aroma comes up, remove the garlic and discard.
  • Turn the heat up to high and add two eggs into the wok/pan. Stir to break yolks.
  • Transfer the egg to a plate when mostly cooked.
  • Add 1 tablespoon oil to the wok/pan, then add carrot and onion.
  • Stir fry for about 1 minute, then add the ham.
  • Stir fry for another 30 seconds until onion is transparent.
  • Add the rice and stir for about 30 seconds to separate grains.
  • Add the egg and shallots, stir for another 30 seconds.
  • Add seasoning and stir well to mix.
  • Add sesame oil along the side and mix well. Serve hot.

Notes

Use freshly cooked or left-over rice. Substitute vegetables as desired. For better presentation, mold the rice in a bowl.
