- 3 Tbsp. olive oil
- 3 Tbsp. pure maple syrup
- 2 Tbsp. Dijon mustard
- 2 Tbsp. fresh orange juice
- 2 tsp. kosher salt divided, plus more to taste
- ¾ tsp. black pepper
- 2 lb. trimmed multicolored carrots
- fresh thyme leaves
- grated orange zest
Whisk together olive oil, pure maple syrup, Dijon mustard, fresh orange juice, 1 tsp. kosher salt, and black pepper in a small bowl.
Place carrots in an even layer on a parchment-lined baking sheet; pour ½ cup of the maple syrup mixture over carrots. Add remaining 1 tsp. kosher salt, and toss to coat. Bake at 425°F until tender and caramelized, about 30 minutes, tossing twice during baking.
Transfer to a platter. Drizzle with remaining 2 Tbsp. maple syrup mixture, and season to taste with additional kosher salt. Garnish with fresh thyme leaves and grated orange zest.
