Ingredients
  

  • 3 Tbsp. olive oil
  • 3 Tbsp. pure maple syrup
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. fresh orange juice
  • 2 tsp. kosher salt divided, plus more to taste
  • ¾ tsp. black pepper
  • 2 lb. trimmed multicolored carrots
  • fresh thyme leaves
  • grated orange zest

Instructions
 

  • Whisk together olive oil, pure maple syrup, Dijon mustard, fresh orange juice, 1 tsp. kosher salt, and black pepper in a small bowl.
  • Place carrots in an even layer on a parchment-lined baking sheet; pour ½ cup of the maple syrup mixture over carrots. Add remaining 1 tsp. kosher salt, and toss to coat. Bake at 425°F until tender and caramelized, about 30 minutes, tossing twice during baking.
  • Transfer to a platter. Drizzle with remaining 2 Tbsp. maple syrup mixture, and season to taste with additional kosher salt. Garnish with fresh thyme leaves and grated orange zest.
