Noodles and Beef

  • 8 oz lo mein noodles See notes
  • 1 lb lean ground beef like 90/10 or 93/7

Sauce

  • ½ cup beef broth
  • cup low sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 5 cloves minced garlic
  • 2 teaspoons minced ginger
  • ½ teaspoon black pepper
  • 1 tablespoon high-heat cooking oil like avocado oil
  • 3 thinly sliced green onions whites and greens separated

Cooking Steps

  • Boil the noodles according to package instructions, reducing cooking time by about 1-2 minutes. Drain and set aside.
  • Preheat griddle or large skillet to medium heat.
  • Prepare the sauce by mixing beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch in a bowl.
  • Cook the ground beef in small chunks on the griddle or skillet, allowing it to char for 2-3 minutes.
  • Add the whites of the green onions when the beef is halfway cooked, then chop and sauté together.
  • Add oil to the pan, then the remaining garlic and ginger, toasting briefly.
  • Add the drained noodles, mixing to incorporate the garlic and ginger. Spread in an even layer to cook for 1-2 minutes.
  • Combine the cooked ground beef with the noodles and pour in the prepared sauce.
  • Toss everything together, sautéing for an additional 2-3 minutes until sauce thickens.
  • Sprinkle with green onion tops and serve immediately.

Notes

Noodle choice - can substitute with regular linguini, fettuccini, or spaghetti. For heat, add red pepper flakes or sriracha. Add vegetables to stretch the dish.
