Ingredients
  

Dough

  • 1.5 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.75 teaspoon kosher salt
  • 0.25 cups vegetable or canola oil
  • 0.25 cups mild olive oil
  • 2 tablespoons whole milk
  • 0.5 teaspoon almond extract

Topping

  • 0.75 cups sugar
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon kosher salt
  • 2 tablespoons cold, unsalted butter
  • 3 pieces small ripe peaches pitted and thickly sliced (about ½-inch wide)

Preparation

  • Heat the oven to 425 degrees. In a mixing bowl, stir together 1 ½ cups flour, ½ teaspoon salt and 1 teaspoon sugar. In a small bowl, whisk together the oils, milk and almond extract. Pour this mixture into the flour mixture and mix gently with a fork.
  • Transfer the dough to an 11-inch tart pan, and use your hands to pat out the dough so it covers the bottom of the pan, pushing it up the sides. Trim and discard excess dough.
  • In a bowl, combine ¾ cup sugar, 2 tablespoons flour, ¼ teaspoon salt and the butter. Pinch the butter into the dry ingredients until crumbly.
  • Arrange the peaches overlapping in a concentric circle over the pastry and sprinkle the butter mixture over top. Bake for 35 to 45 minutes, until bubbly and crust is brown.
  • Cool on a rack. Serve warm or at room temperature, preferably with whipped cream.

Notes

This recipe can be made in a tart pan or on a baking sheet.
