Equipment

  • food processor

Ingredients

  • 2 cups frozen diced pineapple (see below for subs)
  • 0.25 cups water or unsweetened pineapple juice
  • 2 tablespoons maple syrup (you can sub with sugar or honey)
  • 0.5 unit lime or lemon juice

Instructions

  • Place the frozen pineapple chunks in a food processor, and pulse until coarsely chopped. Add maple syrup (sugar or honey) and water.
  • Blend for a couple minutes until smooth, but not liquified. Taste and adjust sweetness as needed.
  • If you like a soft sorbet, serve immediately. If you prefer a firmer sorbet, chill the mixture in the refrigerator for at least one hour.

Notes

For best results, use frozen pineapple chunks. If using fresh, freeze it cut into 1-inch chunks for at least 6 hours. If using canned pineapple, drain, dice, and freeze it, starting with one tablespoon of sweetener instead of two due to sweetness differences.
