Ingredients
  

Soup Ingredients

  • 1 tablespoon olive oil
  • 25 grams butter approximately 1 ½ tablespoons
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped small
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 cans chopped tomatoes each 400 gram/14 ounce
  • 500 ml chicken stock or vegetable stock approximately 2 cups
  • ½ teaspoon sugar
  • 50 ml single or light cream approximately ¼ cup
  • Salt and pepper to taste

Dumpling Ingredients

  • 125 grams dried breadcrumbs
  • ½ teaspoon baking powder
  • 75 grams mature or sharp cheddar cheese, grated approximately 2 ½ ounces
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 unit egg
  • 50 grams cream cheese approximately 2 ounces

Instructions
 

Soup Instructions

  • Heat olive oil and butter in a large pot, then add onion and sweet potato. Cook over low heat for about 5-10 minutes to soften.
  • Stir in garlic and cinnamon. Cook for about a minute until fragrant.
  • Add basil and tomatoes, followed by chicken stock. Stir to combine. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes.
  • Blend your soup until smooth. Return to pot if necessary. Taste and adjust seasoning with sugar, salt, and pepper.

Dumpling Instructions

  • While the soup simmers, combine all dumpling ingredients in a mixing bowl. Form into 8 balls and set aside.
  • Gently drop dumplings into the finished soup after blending, let them simmer for about 10 minutes.
  • To serve, scoop 2 dumplings into each bowl and cover with soup. Optionally sprinkle with extra cheese and fresh basil.

Notes

This recipe is perfect for winter and pairs well with a slice of bread.
