Ingredients
  

  • 1 pound boneless, skinless chicken thighs
  • 1 cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes adjust for heat preference
  • 2 tablespoons sesame oil
  • chopped green onions for garnish
  • crushed peanuts for garnish

Instructions
 

  • Cut the chicken thighs into bite-sized pieces.
  • In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes until smooth.
  • Heat sesame oil in a skillet, add chicken, and cook until browned and cooked through, about 5-7 minutes.
  • Pour the peanut sauce over the chicken, stir well, and simmer for another 5 minutes.
  • Remove from heat, garnish with green onions and crushed peanuts, and serve over rice or noodles.

Notes

Adjust red pepper flakes for desired spice level. Serve with rice or noodles for a complete meal.
